- 1 cup plain flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 cup soft butter
- 1/2 cup castor sugar
- 1/3 cup brown sugar
- Zest of orange
- 1 large egg
- 2 tsp orange juice
- 1/2 tsp vanilla extract
- 5 Cadbury’s creme eggs
1 Preheat the oven to 180° C
2 Mix together in a bowl, the flour, baking soda, and salt.
3 In a separate bowl, using a hand mixer, mix the butter, castor sugar, brown sugar and orange zest.(until fluffy)
4 Add in the egg to the butter and sugar mixture, mix and then add the vanilla extract.
5 On a low setting mix in the dry bowl of ingredients.
6 Using a knife crack open each creme egg, and using a spoon scoop out the centre into a bowl and put aside.
7 Chop up the chocolate egg into small pieces and add to the cookie mix. Mix well.
8 Add the orange juice to the bowl and mix to make a slightly moist consistency.
9 Take a teaspoon of the mixture and roll into a ball and then place on a baking tray lined with parchment paper. Make sure to leave enough space between each ball to allow for the mixture to melt.
10 Bake in the oven for 8-10 mins.
11 Cool on a wire rack.
12 When cold, put a blob of the creme egg filling on the base of a biscuit and then place the base on a second biscuit on top. Hey Voila! a sandwich.
An orange flavoured Cadbury’s creme egg cookie was born. Having all the family around for Easter was great fun, but the chocolate left over was too much. We were drowning in chocolate eggs.
One grizzly rainy morning with time on my hands I looked out of the kitchen window to see the daffodils swaying in the wind and a row of chocolate creme eggs on the window shelf. It got me thinking. What could I make with these? How could I fill a biscuit box ?
Never wanting to waste ingredients, you could use up your Terry’s chocolate orange from Christmas.
A chocolatey and sugary rush galore. Very indulgent!
The recipe made me 10 creme egg cookie sandwiches and 14 chocolatey-orange cookies.
