- 6 white stale bread rolls
- 250ml hot milk
- 3 egg yolks
- 2 tbsp sugar
- 1/4 – 1/2 tsp. Cinnamon
- 2 tbsp breadcrumbs
- 3 tbsp ground almonds
- 2kg cherries (drained from a jar)
- 3 egg whites
- Pinch of dried breadcrumbs
- Few almond flakes for topping.
1 Grease an oven proof dish and sprinkle with the dried breadcrumbs. Needed for cooking in later.
2 Place the bread rolls in a bowl, pour hot milk over them. Leave to soak until cooled down. (As not to scramble the eggs later in the recipe)
3 In a separate bowl, whisk together the egg yolks, sugar and cinnamon.
4 Add the breadcrumbs, ground almonds and cherries. Give it a good mix and then add to the cooled down roll and milk dish.
5 Separately again in a small bowl beat the egg whites until stiff and incorporate gently into your first bowl so all the ingredients are together.
6 Pour into your prepared ovenproof dish.
7 Sprinkle the dish with a bit of sugar and cinnamon.
8 Add a few flakes of butter to the top.
9 Bake on 180°C /Gas 4 for 45 minutes.
