- 450 grams chicken breast, diced 25mm cubes approx 21-25
- 4 teaspoons tandoori powder
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 teaspoon garlic powder
- 1 tablespoon olive oil
- 8 large closed cup mushrooms cut in half
For the topping
- Chopped cherry tomatoes and cucumber for topping
- Cabbage and onion relish (click here for the recipe)
- Mint yoghurt (click here for the recipe)

1 In a bowl add the salt, pepper, garlic powder, tandoori powder and olive oil and mix into a smooth paste
2 Add the diced chicken to the bowl and mix well. Ensure all the chicken cubes are coated. Leave to marinate for at least 1 hour (overnight would be best)
3 Season the mushrooms and lightly fry and allow to cool slightly
4 Skewer the mushrooms and chicken cubes alternately, 3 of each on a skewer
5 BBQ the skewers. Or use a ribbed skillet if BBQ not possible
6 Place on flatbread or in a pitta bread and add add cabbage and onion relish, mint yoghurt and top with chopped tomatoes and cucumber
